This vine has been cultivated in Aosta Valley for centuries and has been rediscovered in recent wines giving rise to wines with a distinct personality.

Cultivation system: low rows with guyot pruning.

DOC Production allowed: 100 quintals of grapes per hectare.

Vinification yield: 70% of the harvest.

Vinification: traditional with grape skins.

Ageing: minimum 5 months, from the December following the grape harvest.

Surface area: surface area registered in the DOC Vineyard Register is 1.85 hectares (2004).

Production: declared for DOC:  15 hectolitres (2003).

Colour: deep ruby red tending to garnet with age.

Aroma: intense, ethereal, characterised by typical spicy notes which are accentuated with ageing.

Taste: dry, velvety, warm, with good and persistent structure.

Alcoholic strength: 12.5° - 13.5°.

Acidity: minimum 4.5 grammes per litre expressed in tartaric acid.

How to serve:
ideal for all meal courses, good with meats, excellent with roasts.  It also goes well with local salamis and cheeses.
Best served at 20°-22° C.
