Details

A quality wine and highly sought for in the flétri variety, where it becomes a meditation wine.  Made from the best grape bunches of white Muscat left to dry in particular airy places away from the sun, it is made into wine only when these quality grapes have lost much of their water content, thus enhancing the high sugar and aromatic contents.

Cultivation system: low rows with guyot or sapling pruning

DOC Production allowed: 100 quintals of grapes per hectare

Vinification yield: 70% of the harvest for the base variety, 40% for the raisin wine variety

Vinification: traditional, sometimes with maceration of grape skins

Ageing: minimum 12 months for the raisin wine variety, from the December following the grape harvest.

Surface area: surface area registered in the DOC Vineyard Register is 13.73 hectares (2004)

Production: declared for DOC: 453 hectolitres for the base and raisin wine varieties (2003)

Colour: brilliant straw yellow with golden reflections, more intense and with amber overtones in the flétri variety.

Aroma: intense, aromatic, with strong impact, with notes of flowers and honey which take on overtones of conserve in the flétri variety.

Taste: full-bodied wine, dry, right alcoholic strength, with delicate bitter aftertaste.  The flétri variety has greater depth and is enriched with a clear sweet base.

Alcoholic strength: 12° - 13° for the normal variety, 15°-16° in the flétri variety.

Acidity: minimum 4.5 grammes per litre expressed in tartaric acid for both

How to serve:
this is ideal drunk between meals, as an aperitif, even if it goes well with shellfish and medium-mature cheeses.  The raisin wine is ideal with zabaglione.

It needs to be served chilled between 8-10° C (14-15° C for the raisin wine) and it is excellent with Aosta Valley tegola biscuits or any sweet biscuits.
