Very valuable and popular in the fletri version, becoming a meditation wine. Collected from the best bunches of the white Muscat allowed to wilt in a special environment ventilated and sheltered from the sun, it is vinified only when the valuable fruits lose most of the water, bringing out their wealth of sweetness and aromas.
Cultivation system: low rows with guyot pruning
DOC Production allowed: 100 quintals of grapes per hectare
Vinification yield: 40% of the harvest
Vinification: In steel, with cold pre-fermentation skin maceration for 36/48 hours. Fermentation at 16° C also for 30 days.
Refinement: Minimum refinement of 12 months in steel from December following harvest, maintaining the wine in the lees fermenting with frequent batonnage (stirring of the lees).
Surface area: surface area registered in the DOC Vineyard Register is 13.73 hectares (2004)
Production: declared for DOC 453 hectolitres (2003)
Color: Intense golden yellow, crystalline, consistent
Fragrance: Very intense and persistent fragrances, aromatic, ample, flowery and fruity, fine. You will recognize acacia, thyme, sage, wilted violet, yellow peach, sweet almond and honey that assume notes of preserves
Flavor: Sweet, warm and soft, full, smooth; wine with body and an intense and persistent flavor. Final sensations: sweet, almond and honey
Alcoholic strength: 15° - 16°
Acidity: minimum 4.5 grammes per litre expressed in tartaric acid
How it is served:
It is served cool, around 12-14° C and matches very well with tegole (Valdostan cookies) and crackers, foie gras, spicy and marbled cheeses. This is also indicated for the preparation of eggnog.
