Details

Made from grapes taken from the highest vines in Europe, harvested when fully ripe, this is a wine which needs to be drunk young.  Ungrafted vines, without root stock, are still used for its production.

Cultivation system: low pergolas with traditional supports in wood or stone

DOC Production allowed:  90 quintals of grapes per hectare

Vinification yield:  70% of the harvest

Vinification: traditional, sometimes with maceration of grape skins

Surface area: surface area registered in the DOC Vineyard Register is 24.82 hectares (2004)

Production: declared for DOC:  1,236 hectolitres (2003)

Colour: pale straw yellow with greenish reflections

Aroma: delicate and subtle, fruity with hints of mountains herbs and freshly-mown hay

Taste: dry, very delicate, with fruity notes enhanced by a pleasing freshness.

Alcoholic strength:  11° - 12.5°; 14.5° - 15.5° in the late harvest variety

Acidity: minimum 4.5 grammes per litre expressed in tartaric acid

How to serve:
Good as an aperitif, it goes well with delicate hors d'oeuvres and mountain trout.  Excellent with pizza.  Blanc de Morgex et de la Salle is best served chilled, at a temperature between 8-10° C.

The Classic sparkling method wine in the extra brut, brut and demi-sec varieties are suitable for all courses with hors d'oeuvres and delicate dishes.  It is characterised by its refined mineral notes obtained by bottle-ageing for at least a year before final packaging.

On the Italian oenological scene some of the late harvest varieties are rare examples of ice wines and are excellent with mature cheese and sweet biscuits.
