Already well-known in centuries past, this wine has become more and more refined over the years. With its dry taste, characterised by sensations of leather and spices, it recalls some Nebbiolo-based quality wines. The "supérieur", obtained from vines with a limited yield per hectare found in the heart of the zone, is differentiated by a higher minimum alcoholic strength and greater ageing.

Cultivation system: traditional pergolas or espalier with guyot pruning.

DOC Production allowed: 90 quintals of grapes per hectare.

Vinification yield: 70% of the harvest.

Vinification: traditional with grape skins.

Ageing: minimum 5 months for the base variety, 12 months for the "Supérieur" from the December following the grape harvest.

Surface area: surface area registered in the DOC Vineyard Register is 5.1 hectares (2004).

Production: declared for DOC: 163 hectolitres (2003).

Colour: pale ruby red, in some vintages and the "supérieur" variety with some weak or strong garnet reflections.

Aroma: delicate, intense, winy, with sensations of dark fruits and spices when aged in wood.

Taste: dry, smooth, harmonious, enriched with tannic overtones with a bitterish base.

Alcoholic strength: 12° - 13.5°.

Acidity: minimum 4.5 grammes per litre expressed in tartaric acid.

How to serve:
Arnad Lard is its "ideal companion", as well as kid and pork. Excellent with mature cheeses, in particular old tome cheeses.

Transfer the wine to a carafe and serve chambré, at a temperature of 18-20° C. In the case of the "supérieur" variety uncork a few hours before serving.
